Amish "Freindship" Bread

So a dear person at church gave me a starter for Amish Friendship bread. The Starter is in a bag and you add a bit to it and leave it sit around for a few days...I'm good at that part, the leave it sit around part you know! Here's a link if you want to make some.Moms who Think
So it's definitely not a new idea-notice the link from Moms Who Think is a few years old. Anyways I did the whole thing and thought I'd use up a few things I had on hand.




Thinking I was sure smart, I just decided to use up all but one part of my starter, and make 3 kinds of cake/bread/.bars/or something.
So for the 1st bunch I put in some ripe bananas I had in the freezer-Hubs froze them when they were pretty ripe and none would eat them-so those are out of the freezer now, and I dumped in some chopped up pecans. I put it in the sheet pan thinking these would be like banana bar cookies! OK one down.
SO I have some whole wheat flour and I thought well I'll use that and add some Apple pie filling I have in the cupboard. I also added the little box of pudding I had on hand. So number three goes in a regular cake pan-I'm thinking Oh BOY! Apple cake!  Healthy Apple Cake with whole wheat flour....man! I'm being healthy.
Rummaging in the pantry I have a box of coconut cream pudding and some shredded coconut and a bag of white chocolate chips, and those chopped pecans...sounds like a vanilla almond joy bar to me! Number 3 is on the way to the last cake pan.
Well here are banana bars.....
And here's healthy whole wheat apple cake
and coconut, white chocolate chip pecan.

My favorite? The coconut one. I should have put it in a sheert pan to make it like a bar insead of like a cake. It is delicious!!!
The whole wheat one? Well not so much. It's kind of bland. Maybe applesauce or something would perk it up,naaa, never mind, I'll just not do that agian.
And the banana bars? well my regular recipe is better.
SO I think Amish (there's nothing Amish about it BTW) Friendship bread is just a way to force a person to bake. "gee that starter HAS to be used!" Oh huh?! Not until I stock up on eggs oil, flour and sugar though!
I do have a bag on my counter just waiting for the next go round...
